Family Favorites Friday: Rueben Panini
We took a family cruise several years ago in February. When I felt some motion sickness, a reuben sandwich from the grill was the only thing that sounded good. After we returned home, I started making these in my grill pan with the press. You could use a panini press, too.
I apologize for the small photos of the photo steps. Hopefully you can see enough.
For each sandwich, layer the following ingredients in the order given:
1 slice rye bread
thousand island salad dressing, about 2 tsps
2 Tbsp sauerkraut
1 slice of swiss cheese
4 slices turkey pastrami (a traditional reuben is made with corned beef, but this works)
1 slice swiss cheese
2 Tbsp sauerkraut
1 tsp mustard
1 slice rye bread
Butter the outside of the sandwich. Place in pre-heated grill pan and top with press (or use panini press). Cook each side 4 -5 minutes. Eat hot.
You can adjust the ratio of ingredients to suit your personal preference.
This is a favorite of some of my boys.
Sometimes I make rye bread in my bread machine; sometimes I buy rye bread.
What kind of panini do you like to make?
DO you remember The Tiffin Shop on Sunset? They had a wonderful cream cheese and asparagus on rye that was amazing and I've been recreating it for years. We also love a good Reuben or anything with sauerkraut.
ReplyDeleteI do remember the Tiffin Shop, but never had the cream cheese and asparagus on rye. Are you willing to share your recipe? Sounds yummy.
DeleteAbsolutely - I've been making it from memory for years, but I do have it written down somewhere. Once found, I'll post it with pics!
