This is one of those recipes that I used to make a lot and then forgot about for awhile. I remembered it this week and modified it a little bit, but it is still as yummy as ever. I found the original recipe in my Southern Living Cookbook I have just about worn that book out!
When all my children were still living at home I would serve this with Parmesan Potatoes, green beans, and a salad. It was a favorite meal. This week I served it with a broccoli salad.
Easy Oven BBQ Chicken
4-6 boneless, skinless chicken breasts (or bone in with skin, or chicken pieces)
1/2 cup flour
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1/4 cup butter, melted
1/2 cup ketchup
1 tablespoon vinegar
2 tablespoons water
1 tablespoon dried minced onion
1 tablespoon Worcestershire sauce (I didn't have any, but it was just as good without)
1/2 teaspoon salt
1/2- 1 teaspoon chili powder (depends on how zippy you like it)
1/4 tsp pepper
Preheat oven to 350 degrees.
Mix flour, paprika, salt, and pepper in large ziploc bag. Add chicken pieces and shake until all pieces are coated.
Pour melted butter into 10" round (or 9" square or larger, if needed) oven proof dish or pan. Add chicken pieces (skin side down if using chicken with skin) Bake 25 minutes, uncovered.
Meanwhile, combine remaining ingredients, stir well.
Remove chicken from oven and turn pieces over. Spoon sauce over chicken pieces. Bake an additional 20 minutes. If using bone in chicken, you will need a longer bake time- 30 minutes and then 30 more minutes.
